The new Skipray looks great, Admiral.

I've often thought about how useful these ships would be for bounty hunters (as long as you install some stasis-type cells for your prisoners, or have some other holding device that saves space), and I almost picked one as my Ubese hunter's vessel, but they're just so...I don't know. They look so weird to me. Kinda off, somehow. Is it just me?

I don't think they're really useful for that. You could only carry one or two stasis cells, you're REALLY well armed (so it would be very difficult to get the appropriate licenses) and there are not many targets you can aquire in space. Sure, there is an old version with a tractor beam and ion cannon are very handy, but you would also be found very quickly. A blastboat amongst freighters sticks out like an elf in a dwarven mine. There's no way you wouldn't recognize it.

I think a simple freighter (perhaps with light armament), a courier or a bigger patrol ship like the Firespray would be better.
The Skipray is a good 'really heavy fighter', system patrol ship or pirate hunter (in pairs or more), a well armed courier for very important cargo or the main battle ships of a poorly defended outer rim planet. Perhaps it would also be a good support for big space battles in the role of heavy bombers.
The Blastboat is really cool. A character of mine flew one as an escort for the group's freighter. (Most of the weapons were taken out so they could get the license.) But I don't think it's a good 'one man bounty hunter vessel'.
But it's your decision. Just remember that you have to take the consequences (including the massive firepower, sure).

Personally I'd say any small fast ship is going to have appeal to bounty hunters. From what we see in the films and the implied nature of the Empire from them, the Empire generally doesn't seem to give much of a hoot about a person's ship's guns - they are only really concerned when you start pointing military grade weapons (like an army) at them. They don't give a frak that the Falcon is packing serious firepower, or that any of the bounty hunters do either.

On the flip side I also don't see the Empire giving away one of its patrol cruisers. I'd have to imagine there'd be a really interesting story behind a bounty hunter character getting hold of one.

Lastly, a little off on a tangent, I generally work on the principle that 'bounty hunter' in Star Wars is essentially a euphemism for 'mercenary'. Whilst Boba Fett (et al) is hired to track down a person, Jango is a general 'hard man for hire' and Zam appears to be an assassin.

Just FYI, I noticed that the Skipray's exterior cockpit view doesn't quite match the new interior.

True, but that would be a lot more work for very little gain. Expect a new windshield thing if I get round to redoing the exterior.
